Holiday Catering Heating Instructions
Complete Holiday Dinner: All food is completely cooked- just heat through.
Whole Turkey
Step 1
Place turkey, covered, in a pre-heated 350F oven for 45-50 minutes or until heated through.
Step 2
Place mashed potatoes, green beans, stuffing, and sweet potatoes, remove plastic cover, place in 350F oven for 30 - 45 minutes or until heated through. Stir occasionally.
Step 3
Pour gravy into a small pot and heat on stove top on low heat, stirring occasionally, until it comes to a simmer. Remove from heat and serve immediately.
Step 4
Heat bread in 375F oven for 20-25 minutes
Leoncini Ham
Step 1
Place Ham in a pre-heated 300F oven for 30 minutes, uncovered.
Step 2
Place mashed potatoes, carrots & pasta covered in oven for 30 - 45 minutes. Place Penne Pasta with Fonduta in oven covered for 45 minutes.
Step 3
Heat Gravy on Stove top for 10 minutes on low heat.
Step 4
Heat bread in 375F oven for 20-25 minutes
Standing Rib Roast
Step 1
Bring Rib Roast to room temperature, let sit for 1 hour.
Step 2
Preheat oven to 450 degrees
Step 3
Place roast in oven for 15min then reduce heat to 325 degrees (Uncovered)
Step 4
Insert thermometer into the thickest part. Cook roast until it reaches an internal temperature of 120F. Cover with foil and rest.
Step 5
Increase oven temperature to 350F. Place mashed potatoes, butternut squash, green beans and Penne Bolognese Pasta covered in oven and cook for 30 - 45 minutes.
Step 6
Heat sauce on Stove top for 10 minutes on low heat. Stir Occasionally.
Step 7
Heat bread in 375F oven for 20-25 minutes
Arrosti
Trimmed & Tied, Rubbed with Tuscan Market Spice Rub, Uncooked
Boneless Turkey Breast
Step 1
Leave Turkey Breast out at room temperature for one hour
Step 2
Preheat the oven to 325 degrees F.
Step 3
Wrap and seal the breast in extra-heavy aluminum foil. Place on a wire rack in a shallow roasting pan.
Step 4
Roast the turkey breast until the meat thermometer reaches 140F in the center. Remove the aluminum foil and baste 2 times with the drippings. Leave foil off for the remainder of the cooking time. Turkey is done when it reaches 160F.
Step 5
Allow to stand 15 to 20 minutes before serving.
Whole Beef Tenderloin
Step 1
Leave Tenderloin out at room temperature for 1 hour
Step 2
Preheat the oven to 350 degrees
Step 3
Roast uncovered. Use a meat thermometer to check the temperature in the middle of the roast for desired doneness. See temperature guide below.
Step 4
Allow to stand 15 to 20 minutes before serving.
Rib Eye Roast of Beef
Step 1
Leave the prime rib out at room temperature for 1 hour. Preheat the oven to 450 degrees F.
Step 2
When the oven is hot, put the roast in and cook for 20 minutes to sear the outside.
Step 3
After 20 minutes turn the oven down to 325 degrees F. and roast until the desired internal temperature is reached. See temperature guide below.
Step 4
Allow to stand 15 to 20 minutes before serving.
Rare | Remove at 100 degrees | Final Temp 110 degrees
Medium-Rare | Remove at 110 degrees | Final Temp 120 degrees
Medium | Remove at 120 degrees | Final Temp 130 degrees
Porchetta
Step 1
Leave Porchetta out at room temperature for one hour.
Step 2
Preheat the oven to 350°F.
Step 3
Cook uncovered for 8 to 10 minutes per pound, or to an internal temperature of 140°F.
Step 4
Allow to stand for 15-20 minutes before serving.
Leoncini Ham (fully cooked)
Step 1
Preheat the oven to 300°F.
Heat for 5 to 8 minutes per pound, or until desired doneness.
Lamb
Step 1
Preheat oven 400F
Step 2
heat for 20-25 minutes or when lamb turns dark
Step 3
Turn oven down to 325F and cook for another 20 minutes. Check temperature until reading shows 130F
Step 4
Let sit for 20 minutes
LASAGNA
Place lasagna in a preheated 350 degree oven and cook covered for 45 minutes. Remove lid and bake for another 10 minutes or until internal temptation reaches 135 degrees.
